    • 1 whole lemon, thinly sliced (seeds removed)
    • 1 fresh jalapeno pepper, stem removed, thinly sliced (or, for lower spice levels, pierced several times and left whole)
    • 1 cup 1/4-inch cubes of feta cheese
    • 4 cloves garlic, peeled and minced or pressed through a garlic press
    • 6 sprigs fresh thyme, plus extra for garnish
    • 1 tablespoon capers, drained and rinsed
    • 3 tablespoons extra virgin olive oil
    • freshly ground black pepper to taste
