    In this version, grilled sesame chicken and asparagus gets a bounce of flavor from the sweet spiciness of pineapple and the crunchy kick of cashews. Brown rice provides the perfect backdrop, but if you wanted to go even lower-calorie (fine, be that way), substitute spinach for the grain and tofu for the chicken.

    Ingredients

    • For Chicken:
    • 1½ lb. boneless, skinless chicken thighs
    • 1 Tbs. sesame oil
    • 1 2-inch piece of fresh ginger, cut into thin coins (no need to peel)
    • 2 Tbs. fresh orange juice
    • 1 Tbs. soy sauce

    • For Bowl:
    • 1 lb. asparagus, bottom inch trimmed
    • 2 cloves garlic, minced fine
    • 1 1-2 C. fresh pineapple, cut into small cubes
    • Sriracha
    • 4 cups cooked brown rice, warmed through
    • 1 C. roasted cashews (pieces are fine)
    • 8 roughly chopped basil leaves (optional)
    • For Dressing:
    • 2 tsp. Sesame oil
    • 3 Tbs. orange juice
    • 1 pinch ground ginger or 1 tsp. minced garlic
    • splash soy sauce
    • splash lime juice or rice wine vinegar
