GOOEY CARAMEL BUTTER BARS

    In the book version, Jill suggests pecans, walnuts or cashews for an optional caramel topping; I prefer without, finding the crunch distracting here. I do, however, add far more than the recommend pinch of salt in the printed recipe; in my version, I naughtily add copious amounts of my favorite fleur de sel atop the caramel, and I swear that's the reason they are so darned compelling.

    Ingredients

    • FOR THE CRUST:
    • 1 lb. (4 sticks) unsalted butter, at room temperature
    • 1 C. granulated sugar
    • 1½ C. confectioners' sugar, sifted
    • 1 Tbs. pure vanilla extract
    • 1 tsp. salt
    • 4 C. unbleached all-purpose flour
    • FOR THE FILLING:
    • 1 bag (14 oz.) caramel candies, (about 50 individual caramels), unwrapped
    • ? C. heavy cream (I used milk and it was fine)
    • ½ tsp. pure vanilla extract (I doubled it)
    • pinch of salt (I added about 2 tsp. fleur de sel)
    • confectioners' sugar for dusting (optional)
