    Salsa out of a jar just does not compare to fresh tomato salsa. And the best way to  kick your fresh tomato salsa up several notches? Use fresh heirloom tomatoes from the farmers market. An heirloom is typically a variety of tomato that has been passed down, through several generations of a family because of it's valued flavor characteristics.The best Heirloom tomatoes are open-pollinated varieties introduced before 1940's and they come in a variety of shapes, colors and flavors. Each heirloom variety is genetically unique and has evolved a natural resistance to diseases and pests and thrives in local climates and growing conditions. Heirloom tomatoes add color to the traditional red tomato salsa. Just make sure the tomato is slightly firm so that it doesn't fall apart when diced. I prefer a sweet yellow onion to balance the heat of the jalapeño and the Liquid Smoke is a hint passed down in my family that gives the salsa a smokey grilled flavor. 

    Ingredients

    • 2-3 medium sized fresh heirloom or vine ripe red tomatoes (from 1 lb to 1 1/2 lb), stems removed, finely diced
    • 1 small yellow onion, finely diced
    • 1 jalapeno chile pepper (stems, ribs, seeds removed), finely diced
    • Juice of 1 lime
    • 1/2 cup chopped cilantro
    • Salt and pepper to taste
    • 3-4 drops liquid smoke
    • Optional: oregano and/or cumin to taste
