    Ingredients

    • 2 teaspoons plus 1 1/2 tablespoons olive oil
    • 1/2 cup very finely diced onion
    • 1 pound ground chicken (I used 3/4 pound white meat, 1/4 pound dark meat - you can ask for it this way at the butcher counter)
    • 1/2 cup finely diced fresh mango
    • 1 tablespoon minced fresh chives
    • 1/4 teaspoon red pepper flakes {omit for AIP}
    • 3/4 teaspoon salt
