    • ½ of a jalapeño, diced
    • 1 clove garlic
    • 1 teaspoon paprika
    • 1 tablespoon chopped cilantro
    • Salt and pepper
    • 2-3 cups cauliflower florets
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 pound fresh cod (or another white fish!)
    • 1/2 cup all-purpose flour
    • 2 teaspoons Chili powder
    • 1 teaspoon garlic powder
    • 1 teaspoon cumin
    • ½ teaspoon cayenne pepper (add more or less depending on spice preference!)
    • 2 tablespoons vegetable or olive oil
    • 2 tortillas, cut into small strips
    • ½ tablespoon olive oil
    • ½ teaspoon paprika
    • 1 mango, diced
    • 1 cup black beans
    • 2 cups cooked sweet corn
    • 1 avocado, sliced
    • Additional toppings: Crumbled cotija cheese, cilantro, chopped green onion, chopped jalapeño, lime wedges
