    Blueberry pancakes were one of my most favorite things to have on Saturday mornings when I was growing up. My mother, the quintessiantial perfectionist, always had a breakfast ready for the 4 us kids. 4 kids within a 5 year time frame so it really is amazing she did this, even on a weekday. However, Saturday’s were the messy mornings with pancakes or waffles, eggs and usually bacon. My adult memory tells me that the blueberry pancakes on these Saturday mornings were my favorite special treat. It’s probably why to this day my favorite breakfast ideas are stuffed with blueberries. So imagine my surprise when I was clicking through my site last week, putting together a meal plan and I didn’t see an easy blueberry pancake recipe. There was a blueberry muffin recipe, a blueberry and peach crostada and even a homemade blueberry yogurt recipe, but not a blueberry pancake!!! I immediately realized I was going to have to quickly remedy this situation. Saturday morning blueberry pancake making was reinstated! I did deviate from my mothers store bought pancake mix and made mine from scratch. Which, by the way people, is basically throwing in a few teaspoons of baking powder and a pinch of salt into flour. That’s it. I then made a little blueberry syrup/compote to put on top. That’s super simple too. Well, I guess if you don’t have a 3, 4, 7 and 8 year old wanting breakfast pronto ;). All you do is take about 1 cup of frozen blueberries and put in a small sauce pan with a few tablespoons of water, a couple tablespoons of maple syrup and a tiny pinch of salt and cinnamon. Bring to a boil, then simmer while you make the pancakes.
