    This hearty oats loaf is filled with fiber. It's filling, but it's not too heavy, so it makes a great breakfast on the go, afternoon snack, or side dish with dinner.

    Ingredients

    • 2 cups unbleached all purpose flour
    • 1 cup whole wheat flour
    • 2 Tablespoons flax meal
    • 1/2 cup plus 2 Tablespoons rolled oats (old fashioned or quick-cooking, but not instant oats)
    • 1/4 cup sugar
    • 1 Tablespoon baking powder
    • 3/4 teaspoon salt
    • 1 large egg
    • 1 1/2 cups low fat milk (I used 1%)
    • 3 Tablespoons canola oil
