    • 1/4 cup mustard (I use Kroger Horseradish Mustard because it is Paleo)
    • 5 carrots , sliced
    • 1 1/2 large zucchini or 2 small , sliced and quartered
    • 1 Tbs olive oil
    • 1.5 lbs of chicken tenders
    • 3/4 tsp salt
    • 1/4 + 1/8 tsp ground black pepper
    • 1/4 + 1/8 tsp thyme
    • 1/4 + 1/8 tsp herbes de provence
