    Dijon, mayonnaise, lemon juice and olive oil come together to make the easiest summer marinade for grilled or broiled chicken.

    Ingredients

    • 8-10 chicken thighs (I used boneless, but bone in work well, too)
    • 3 tablespoons dijon mustard
    • 1 tablespoon mayonnaise
    • ¼ cup olive oil
    • juice of 1 lemon (reserve the zest for garnishing)
    • 1 teaspoon kosher salt
    • ¼ teaspoon freshly ground black pepper
