    This outside-of-the-box take on Thanksgiving delivers holiday classics in grilled form. Stuffing, potatoes, seitan, and even sweet potatoes with marshmallows. It's got it all. Just add cranberry sauce and gravy!

    Ingredients

    • 1 Tablespoon extra virgin olive oil
    • 2 Tablespoons freshly-squeezed lemon juice
    • 1 teaspoon lemon zest
    • 1 teaspoon balsamic vinegar
    • 1/4 cup vegetable broth
    • 1 clove garlic, minced
    • 1/2 teaspoon dried savory
    • 1/2 teaspoon dried herbs de Provence
    • 1/4 teaspoon rubbed sage
    • Pinch of salt and pepper
    • 8 ounces seitan in medium-sized chunks (I used Upton's Naturals traditional seitan. It's already in perfectly portioned pieces.)
    • 5 small Yukon Gold potatoes
    • 1 small to medium-sized sweet potato, cut into 3/4 inch thick slices
    • 1/2 red bell pepper, cut into medium-sized pieces
    • 1 medium yellow onion, cut into medium-sized pieces
    • 5 cremini or white button mushrooms
    • 2 heaping cups sourdough bread, cut into roughly 2 inch chunks
    • Optional: 5 vegan marshmallows (I used Dandies)
