    Ingredients

    • 3 Tbsp olive oil
    • 2 medium onions, diced
    • 4 cloves garlic, minced (I use the frozen garlic cubes)
    • 3 pounds zucchini, halved lengthwise and sliced
    • 1½ cups vegetable broth
    • 3 cups water
    • ½ tsp salt
    • ? tsp pepper
    • 1-2 frozen basil cubes (or 1-2 teaspoons fresh chopped basil)
