    Ingredients

    • 1 large eggplant (see Notes below)
    • 3/4 cup quinoa flakes (instant potatoes or oatmeal may work)
    • 1/2 small onion , chopped fine
    • 2 cloves garlic cloves , minced or pressed
    • 1 cup cooked lentils
    • 1 teaspoon curry powder
    • 1/2 teaspoon ground cumin
    • 1/4 teaspoon ground coriander
    • 1/2 teaspoon smoked Spanish paprika (spicy or mild)
    • 2 teaspoons potato starch , cornstarch, or arrowroot
    • 1/2 teaspoon salt (or to taste)
    • 1/2 teaspoon agave nectar (or other sweetener)
