- 1 large head of cauliflower, grated in food processor (instructions below)
- 5 large carrots, peeled and grated
- 1/2 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp coconut oil
- 2 tbsp curry powder
- 1 tsp fresh ginger, grated
- 1/2 cup raisins (I used a mix of golden raisins and dark raisins)
- 1 tbsp honey
- 3 tbsp apple cider vinegar
- 1 can garbanzo beans, or any bean of choice, drained and rinsed
- 1 tsp red pepper flakes (optional, if you like spicy)
