    This is a great subtle twist on the American favorite cucumbers in vinegar. In some parts of the world this is also called a cucumber relish. A relish is a cooked or pickled vegetable used as a condiment or to enhance the staple dish - Wikipedia. This tangy cucumber relish is a perfect side to our Grilled Chicken Satay and Satay Peanut Sauce. A little bite from the vinegar and a little kick from the chile pepper really enhances the rich flavors of the Satay. These spicy pickled cucumbers would also be great on a hamburger or grilled chicken breast sandwich. Let them sit even longer to really develop the flavor. This side dish was low in cholesterol and saturated fat but high in sodium.

    Ingredients

    • 1 large cucumber, peeled and thinly sliced
    • 2 shallots, thinly sliced
    • 1 or 2 small dried chile such as Japones Chiles or the hotter Tien Tsin Chiles
    • 1/3 cup white vinegar
    • 2 teaspoons brown sugar
    • 1/2 teaspoon Coarse Sea Salt
    • 1 teaspoon Ground Black Pepper
    • Dried Cilantro Leaves, for garnish
