    This Creamy Asparagus, Leek, and Chicken Cauliflower Risotto recipe is a light yet creamy Paleo dish full of delicious leek and asparagus flavor. The “risotto” is made out of cauliflower. 

    Ingredients

    • 1 small head of cauliflower
    • 1 tsp oil
    • 2 Tbs diced garlic (this was 6 cloves for me)
    • 2 cups sliced leeks ( this was from 1 large leek for me)
    • 1/4 cup of diced yellow onion (this was 1/4 of an onion for me)
    • 2 Tbs water
    • 1/2- 3/4 pound of chicken tenderloin (depends on how much chicken you want in the dish)
    • 1 tsp thyme
    • 1/8 tsp red pepper flakes
    • 1/2 tsp ground black pepper
    • 1 cup + 1 Tbs coconut milk or coconut cream, divided (Golden Star and Arroy D are great)
    • 1 tsp salt
    • 1/2 tsp ground nutmeg
    • 1 tsp coconut flour
    • 1.5 cups chopped asparagus (cut into 1/2 inch sized pieces) ( .35 pound, 160 grams)
