Chinese-style Fish Fillet With Sticky Corn Sauce

    When the girls were quite young and we were starting to introduce them to Chinese food, they quickly developed their own favorites. Sweet sour pork and fried pork spring rolls were dishes they almost always ordered.

    Ingredients

    • 1/2 cup sweet corn kernels ((I used canned))
    • 2 cups liquid from the canned corn (plus enough vegetable broth to make 2 cups)
    • 2 teaspoons tapioca starch (or corn starch)
    • 1 tablespoon cooking oil
    • 1/2 teaspoon minced garlic
    • 1 small onion (peeled and thinly sliced)
    • salt (to taste)
    • pepper (to taste)
    • 600 to 700 grams fish fillets (any firm and fleshy fish is good)
