    Ingredients

    • 4 medium potatoes (russet, white, and red are all good choices, no need to peel), cut into approximately ¾ inch cubes
    • 1 tablespoon minced garlic
    • 1 and ½ tablespoons olive oil
    • ? teaspoon salt
    • ? teaspoon pepper
    • 1 and ½ pounds boneless skinless chicken (I like to use thighs)
    • ¾ cup shredded mozzarella cheese
    • chopped fresh parsley (optional)
