Ingredients
- 1 tbsp. olive oil or vegetable oil
- 1 lb. chicken breasts, cut into 1/2-inch pieces OR 1 lb. ground chicken
- 1 stalk celery, thinly sliced
- 1/2 (8 oz.) can sliced water chestnuts, coarsely chopped
- 4 shitake mushrooms, thinly sliced (optional)
- 2 garlic cloves, minced
- 1/2-inch ginger, peeled and finely grated*
- 1/4 c. low-sodium soy sauce
- 2 tbsp. sesame oil
- 2 tbsp. oyster sauce
- 1 tsp. chili paste (like Sambal Oelek), 1 tbsp. for spicy chicken
- 1 head butter lettuce
- 1 carrot, julienned and cut into 1-inch pieces
- 1/2 c. roasted and lightly salted cashews
- 2 green onions (green part only), cut on the bias
