    Inspired by Rene Redzepi's NOMA and adapted for Thermomix

    Ingredients

    • 500 g. (17.6 oz) peeled and sliced carrots (fresh organic are best)
    • 800 g. (28.2 oz) fresh carrot juice (best to make your own)
    • for one batch sorbet/gelato
    • 180 g (6.3 oz) previously frozen carrot puree
    • 180 g (6.3 oz) previously frozen fresh carrot juice (best to make your own)
    • 180 g (6.3 oz) previously frozen mandarin oranges (seedless or with seeds removed)
    • 1 egg white
    • 120 g (4.2 oz) natural yogurt optional (make your own!) (okay, by adding yogurt this is not a true 'sorbet' but more of a sherbet. It works fine without the yogurt, but I preferred it with.)
    • 80 g - 100 g (2.8-3 oz) sweetener (I used lime syrup, which I had on hand from making the Licorice Root Parfait a few days prior. Use your preferred liquid sweetener, or try it with Thermomix-powdered sugar. Also, I used less sweetener (60 g/2 oz) because my delicious organic mandarin oranges were sweeter than most. Consider your personal preferences and explore the possibilities!)
