    This hearty Caribbean inspired soup is made with red and black beans and collard greens simmered in a coconut milk broth, flavored with lime juice and Jamaican jerk seasoning.

    Ingredients

    • 1 tbsp. olive oil
    • 1 onion, diced
    • 3 garlic cloves, minced
    • 1-2 habanero or Scotch bonnet peppers, minced
    • 1 1/2 tsp. fresh grated ginger.
    • 2 cups vegetable broth
    • 1-14 oz. can light coconut milk
    • 1-14 oz. can diced tomatoes, with juice
    • 1-14 oz. can or 1 3/4 cups cooked red kidney beans, drained and rinsed
    • 1-14 oz. can or 1 3/4 cups black beans, drained and rinsed
    • 2 tbsp. lime juice
    • 2 tbsp. agave or maple syrup
    • 1 tsp. allspice
    • 1 tsp. dried thyme
    • 1/2 tsp. ground cinnamon
    • 1/2 tsp. black pepper
    • salt to taste
    • 1 medium bunch collard greens, stems removed and torn into 1-2 inch pieces
