    This Butternut Squash Pasta Salad is the perfect holiday side dish for fall and winter featuring cranberries, pancetta and candied walnuts!

    Ingredients

    • 100 to 150 grams pancetta (cut into small chunks)
    • 1 cup roughly chopped walnuts
    • 1/3 cup brown sugar
    • 1 tablespoon maple syrup
    • 2 tablespoons olive oil
    • 3 cups butternut squash (cut into cubes)
    • sea salt and pepper to taste
    • 2 tablespoons maple syrup
    • 500 grams Barilla Farfalle pasta (and salt for the pasta water, cooked to al dente according to the package directions)
    • 1 cup dried cranberries
    • 2 or 3 big handfuls of baby spinach (washed and dried)
    • 1 teaspoon Dijon mustard
    • 4 tablespoons maple syrup
    • 2 tablespoons balsamic vinegar
    • a pinch or two of sea salt and pepper
