    • 1 large potato or 2 small/medium, organic (cut into small cubes)
    • 1 small-medium butternut squash (peeled & cut into small cubes)
    • ½ medium white onion, finely diced
    • 2 garlic cloves, minced
    • 2 Tbsp olive oil
    • ⅓ cup vegetable stock
    • 2 tsp celery seed (optional but really elevates the flavor)
    • Salt and pepper to taste
