    This is a quick, easy and virtually foolproof hollandaise sauce. The recipe can be doubled and if there happens to be left overs you can reheat in the microwave. Use 1 egg yolk, 1/2 - 1 tsp. lemon juice and 1/2 cube butter for two servings (e.g. for Eggs Benedict for 2 people)

    • 2 egg yolks
    • 1 - 2 teaspoons lemon juice
    • 1 dash cayenne pepper (optional)
    • 1/2 cup (1 cube) butter, melted
