    • 3 cups chopped sweet potato (about 1/4 inch pieces)

    • 1 tsp garlic powder
    • 1 tsp paprika
    • 1 tsp oregano
    • 1 tsp onion powder
    • cayenne pepper (optional)
    • 1 lb chicken tenders
    • 3/4 cup chopped onion
    • 1 1/2 cups shaved brussels sprouts
    • 2 large garlic cloves, minced
    • 2 10-ounce packages Trader Joe's organic frozen brown rice (you can also make your own rice or use less than the recipe calls for)
    • 1/2 cup chopped cilantro, plus more for garnish
    • 1 large avocado
    • 1/4 cup plain Greek yogurt
    • 1 tablespoon + 1 tsp fresh lemon juice
    • salt to taste
