This Apple Maple Baked Oatmeal with berries is the perfect no fuss make ahead breakfast. Quick, easy, healthy & full of warm and cozy fall flavors.
Ingredients
- 3 large eggs
- 1 1/2 cups almond milk (or any other milk of your choice)
- 3/4 cup unsweetened applesauce (can also use mashed bananas)
- 1/3 - 1/2 cup maple syrup (plus more depending on how sweet you like it - you can always serve with more maple syrup once baked) (use honey if you prefer)
- 1 teaspoon pure vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground flax seeds, optional
- 3 1/3 cups oats (I used half rolled oats & half quick oats)(use gluten free if necessary)
- 1 1/4 cup mixed berries + 1/4 cup for topping (I used fresh but frozen berries work as well)
- Serving options: Maple syrup, Fresh Berries, Milk + chopped nuts
