    • 1 can diced tomatoes or 3 large tomatoes diced finely (with their juice)
    • 1 can of kidney beans rinsed and drained (or you can use dry beans that you cook for a healthier version)
    • Salt and pepper
    • Optional:
    • GMO free corn (canned) or 1 whole cob steamed/ boiled (remove from cob after cooking)
    • Fresh coriander for garnish
