    I'm loving these Beef Quinoa Stuffed Bell Peppers! The quinoa and beef mixture with the Mexican spices and then stuffed in a bell pepper is incredibly delicious!

    Ingredients

    • 1 cup uncooked Quinoa
    • 8 ounces Ground Beef
    • 1 Red Onion, diced small 
    • 1 cup cooked Corn Kernels 
    • 1 1/2 cups diced Fresh Tomatoes
    • 3 Garlic Cloves, minced 
    • 1 cup Beef Broth
    • 2 tablespoons Chili Powder
    • 2 tablespoons Cumin
    • 1 tablespoon Smoked or Regular Paprika
    • 1 teaspoon dried Oregano 
    • Salt and pepper
    • 1/2 cup Cheddar Cheese (more for extra cheesy Stuffed Peppers)
    • 16-18 Green Bell Peppers 
    • Limes, Avocado Slices, Sour Cream and Green Onions for garnish
