    • 1 medium onion, chopped
    • 1 cup ketchup
    • 1/2 cup brown sugar, packed
    • 1/3 cup molasses
    • 1 tablespoon Dijon mustard
    • 2 teaspoons salt, plus additional if desired
    • 1 teaspoon fresh ground pepper, plus additional if desired
    • 1 bay leaf
    • 1 meaty ham bone (omit if using bacon)
    • 4 slices thick-sliced bacon, cooked and crumbled (omit for ham bone)
