- 1 small onion- diced
- 4 garlic cloves- minced
- ? C fresh mint leaves or 2 tsp dried
- 1 teaspoon ground turmeric
- ¾ teaspoon kosher salt
- ¾ teaspoon cracked pepper
- 1 teaspoon olive oil
- Broth:
- 10 Cups flavorful Chicken Stock
- 1 Small onion- finely diced
- 1-2 Tablespoons olive oil
- 4 Garlic cloves, minced
- 1 tsp ground turmeric
- 1 lime
- 2-3 C finely shredded spinach ( or arugula or kale)
- ½ C chopped fresh cilantro
- ½ C chopped scallions
- Kosher Salt and Pepper to taste
