    Ingredients

    • 4 tablespoons neutral oil
    • 1 teaspoon black mustard seeds
    • 1 teaspoon cumin seeds
    • 2 onions medium, finely chopped
    • 4 cloves garlic finely chopped
    • 1 ginger thumb, finely chopped
    • 2 teaspoons ground cumin
    • 2 teaspoons ground coriander
    • 2 teaspoons turmeric powder
    • 1 teaspoon chilli powder depending on your heat tolerance
    • 3 cups chickpeas drained
    • 1/2 butternut squash peeled and cut 1 inch dice, parboiled, see step 6.
    • 1 cup red lentils dried, rinsed
    • 3 baking potatoes medium, cut into 1 inch cubes, parboiled, see step 6.
    • 2 11/16 cups chopped tomatoes
    • 7/8 cup light coconut milk
    • 1/2 can water =200ml/a bit less than 1 cup
    • 1 1/3 cups chopped tomatoes
    • 1 2/3 cups light coconut milk
    • 1 handful baby spinach or curly kale
    • 1/2 teaspoon Garam Masala
    • 3 leaves fresh coriander
