    Stuffed peppers with ground beef and rice

    Ingredients

    • 1 lb. lean ground beef
    • 6 red peppers (the ones I used were big so you can use 12 small ones)
    • 1 onion, diced
    • 1/4 cup olive oil
    • 2 cloves of garlic, minced
    • 1/2 cup fresh parsley, chopped
    • 1/2 cup fresh dill, chopped
    • 1 tsp. fresh mint, chopped
    • 1 cup of tomato sauce (Italian and organic varieties are best)
    • 1/2 cup rice (arborio rice or jasmin rice is best)
    • Salt and pepper to taste
