    This easy skillet rice dish is perfect for a busy weeknight taking as little as 30 minutes to make made entirely in one pan. Hidden with some veggies and all your favorite taco flavors.

    Ingredients

    • 1 lb ground turkey or beef
    • 1 medium onion, diced
    • 2 cloves of garlic, minced
    • 2 tablespoons of olive oil
    • 1 red bell pepper, cored, seeded and diced
    • 1 jalapeno, cored, seeded and diced (optional)
    • 1 cup uncooked long grain white rice (you can also use brown as well and adjust the cooking time)
    • 1 (14 ounce) can fire-roasted diced tomatoes, undrained
    • 2 1/4 cups of low sodium chicken broth
    • 1/2 cup canned black beans, drained and rinsed
    • 1 cup corn kernels, frozen or canned
    • 1/2 cup sweet peas, frozen or canned (optional)
    • 1 teaspoon of chili powder, or to taste
    • 1/4 teaspoon of cayenne pepper, or to taste
    • 1/2 teaspoon of smoked paprika
    • 2 teaspoons of cumin
    • Salt and black pepper to taste
    • 1 cup (or more as desired) of shredded colby-jack or cheddar cheese
    • Additional toppings (optional)
    • diced avocado
    • green onions
    • fresh chopped cilantro
    • black olives
    • sour cream
