Summary
A lot of the nutrients in fruits and vegetables are in the skins, which most people get rid of before eating. I wanted to come up with a fun way to get people to enjoy the most nutritious part of sweet potatoes, the skin, and reduce food waste at the same time. This recipe, with its Mexican twist, is a unique take on a stuffed sweet potato topped with avocado, black beans, and tomatoes. Perfect for Taco Tuesday!
Ingredients
- 2 medium sweet potatoes
- 1 cup black beans
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 cup chopped green onion
- 1 teaspoon lime juice
- chopped tomatoes, sliced avocado, hot sauce, salsa, or any other desired toppings
