    • 1/2 cup diced tomatoes {I used about 16 grape tomatoes}
    • 1 clove minced garlic
    • 1 tsp olive oil
    • 2 tsp apple cider vinegar
    • 1/2 tsp chili powder
    • 1/8 tsp cumin
    • 1/4 tsp paprika
    • 1/4 tsp salt
    • 1/2-1 TBSP minced jalapeño optional
    • 1/4 cup shredded reduced-fat cheddar or Mexican cheese blend divided
    • 1 package 1/3 reduced-fat cream cheese 8 oz
    • 1 TBSP chopped cilantro or parsley optional
