    • 1 pound boneless free-range chicken breast, grilled and chopped
    • 6 cups mixed dark leafy greens (including baby kale)
    • 2 whole large Roma tomatoes, coarsely chopped
    • 3/4 cup roasted red peppers, sliced (1 small red bell pepper)
    • 1/2 cup golden raisins
    •  1/2 cup cooked quinoa
    • 1/2 cup fresh parsley, finely chopped
    • 1 cup cucumber, peeled, seeded and chopped (1 small cucumber)
    •  1/2 small red onion, thinly sliced
    • 1 cup canned garbanzo beans, drained and rinsed
    • 1/2 cup extra virgin olive oil
    • 1/4 cup freshly squeezed lemon juice (you can use fresh lime juice if you prefer)
    • 1 clove garlic, finely minced
    •  1/2 teaspoon freshly ground black pepper
    •  1/2 teaspoon freshly ground kosher salt
