    I’m a soup addict. I eat soup everyday at lunch and dinner. And I’m on a mission to make everyone else a soup addict, too! I embarked on a challenge to make an out of the ordinary soup for normally picky eaters. This soup is easy, creamy, healthy, immune boosting, flavorful, vegan, low-FODMAP, and dairy-free, and has some of my favorite foods – pumpkin, ginger, coconut and brussels sprouts. While the pickiest eaters may not find brussels sprouts easy to love, they are surprisingly tasty. And when this soup is made with love and care, they might just be convinced.

    • 2 teaspoon fresh ginger (grated)

    • 8 brussels sprouts (shaved or sliced thinly)
